Leek and tattie soup!

As I’ve mentioned before, I get a Veg Bag of tons of organic and local veggies from Bellfield organic farm, organized by the One World society on campus for just 5.50 for a week’s worth of veg! Today I attempted my first leek and tattie soup from scratch and it turned out deliciously. And the only plastic item was the butter I used – although technically it’s wax paper….

Ingredients

Ingredients:

4 medium potatoes

3 leeks

25g butter

1 onion

1l vegetable stock

1. Chop the onions, potatoes and leeks into small pieces

2. Melt 25g of butter and fry the onions. When golden brown, add the potatoes and leeks and keep on a low heat, stirring occasionally for 5 minutes.

All mixed up together

3. Add the stock and bring to a boil, then reduce heat and simmer for 20-25 minutes.

After simmering for 25 mins but before the food processor got all the lumps out!

4. Remove from heat, let sit for 3 mins to cool down. Blend with a food processor and serve warm 🙂

The finished product.. yum!
